Indonesian Gastrodiplomacy: Analyzing Visual Representation, Narratives, and Customer Perceptions of Restaurant Djakarta Bali

Abstract

his study examines the structural operationalization of Indonesian gastrodiplomacy in France at Djakarta Bali Restaurant in Paris. Used a mixed-methods design, it combines qualitative semiotic observations and management interviews with a quantitative digital sentiment analysis (Random Forest, Neural Network, Logistic Regression, and k-Nearest Neighbors (kNN) algorithms) using the tri-component attitude framework (Cognitive, Affective, Conative). Empirical findings show that visual variables (authentic architecture, contemporary plating) and textual glocalization (bilingual menus, staff storytelling) positively align host-country expectations with national narratives. Digital sentiment tracking mathematically supports this, revealing a dominant cognitive appreciation for authenticity (36.5%) and robust conative behavioral intentions toward repeat patronage (34.5%). The findings suggest that the interaction of visual representation, culinary storytelling, and customer responses provides a provisional visual–narrative–CAC framework for understanding restaurant-level gastrodiplomatic representation. Rather than demonstrating direct changes in national attitudes or soft power, the study shows how an Indonesian restaurant can function as a cultural encounter space in which Indonesian identity is represented and interpreted by international diners. Given the single-case design, the proposed framework requires further testing through comparative studies of Indonesian restaurants in other French and international cities.
